Simone Miller is a sensation. Relocating to San Francisco from the East Coast, she started Zenbelly, a 100 percent gluten-free catering company. I’ve been so impressed that her dishes are so delicious and absolutely indistinguishable from their gluten-filled cousins that I own both her previous cookbooks (Zenbelly and The New Yiddish Kitchen). In fact, I used the stuffing recipe from her blog for my Thanksgiving menu and thought I was in heaven.
Book three is all about Paleo soups and stews. Included in the quality bound and photographed volume are over one hundred recipes for every season, course, and occasion, including dessert.
One of Simone’s teachings is that if you learn how to make a good tomato soup, you have the keys to making a number of other tasty soups. In this book she sets out to prove it. The beginning pages are a tutorial on tools and equipment, how to season to taste and various vegetable props. She explains the differences between stock, broth and bone broth, and then offers basic broth recipes.
In the soup recipe section, I particularly liked the Moroccan Carrot Soup (p. 70) with its yoghurt and mace. The Potato Leek Soup with frizzled leeks is rich and creamy. The frizzled leeks on top add color and texture. Tom Ka Gai (Thai Chicken Coconut Soup – p. 102) is one of my favorites, and Simone’s version is superb. It’s packed with stemmed shitake mushrooms and has a few cilantro leaves for garnish. Following the soups section are a few stew recipes—Moroccan Vegetable Stew (p. 168), Zenbelly Chili (p. 162).
For the Paleo food enthusiast, a loud cheer can be given for the next section—a slew of recipes to enhance soups and stews but that are rarely found in Paleo-land. There are homemade noodles (p. 198) made with cassava flour, spiced pepitas and breads, crackers and dippers. The Breadsticks (p. 224) are out of this world delicious, as is the Naan (p. 236).
Paleo Soups & Stews is now my go-to cookbook for the cold winter months. Kudos to Ms. Miller and Victory Belt Publishing. You’ve created a winner.
